Hi Judy,

I just saw your post in the moderation thread. I would love to have your recipe for lentil chili if you wouldn't mind sharing it. It sounds so yummy. I love lentils but I tend to use them over and over again in the same tired recipes.

Hi Judy!

I was just checking in and I saw you found my post. Thank you so much. The chili recipe looks great! I only have a couple of lentil recipes and I'm growing weary of them. Change is good! Thanks for taking the time to answer.

Here is a Vegetarian Chili from Simply Best Weight Watcher's cookbook with my own adaptations

4 tsp olive oil
3 onions diced ( I use pre-diced onions or vidalia sweet onion relish 1 cup if I am out of onions)
1 28 oz can crushed tomatoes or puree
2 cups low sodium veggie broth (I also use chicken broth)
1 1/2 cups bulgur
1 19 oz can each kidney and cannellini beans rinsed and drained
2 cups fresh or frozen corn kernals (If i don't want the corn, I leave it out)
1 green pepper seeded and chopped
4 tsp chili powder
1/2 tsp salt or to taste
1/4 cayenne pepper or to taste
2 cups salsa- your favorite kind!

In large sauce pan saute onions in oil until tender.
Stir in tomatoes, broth and bulgur. simmer 10"
Add beans, corn and bell pepper spices & salsa simmer 10" longer.

I found another one I've only made once or twice , but I remember it being good!

Also from WW Simply Best cookbook

1 pound lentils
One 14 1/2 oz can diced tomatoes
1 green bell pepper chopped
1 cup low sodium veggie broth
One 6 oz. can tomato paste
1 carrot chopped 1 onion chopped ( I might sub in pre diced carrot onion celery mix pruchased from grocery)
2 TB red wine vinegar
t tsp. each oregano and ground cumin
2 garlic cloves minced ( I use bottled minced garlic)
1/4 tsp crushed red pepper
1/4 tsp salt

In large Dutch oven, bring lentils and 5 cups water to boil . reduce heat and simmer 20"
Add tomatoes, bell pepper, broth,tomato paste, veggies, vinegar, adn spices. Bring to boil, ruduce heat and simmer until lentils are tender about 40".

*Taste and adjust seasoning. I add chili powder, duh. I might sub in salsa for some of the broth and omit any salt.

I'm no gourmet, but my food is tasty. :7
