Interesting article from Dr. Weil

I found this list strange myself...all excellent foods, but so much seemed to be missing!
Anyway, thanks for an interesting read.
Maybe the "missing" foods have JUST a little less & are in the next 20!

I just had some last night, they are simple and very good. I got the recipe from a friend .

2 CANS 15 OZ RED BEANS
1 CAN 15 OZ PINTO BEANS
1 CAN LIGHT RED KIDNEY BEANS
1 CAN 15 OZ. BLACK BEANS
2 CUPS BABY CARROTS
2 CANS FAT FREE, LOW SODIUM CHICKEN BROTH
2 FESH TOMATOES
1 LARGE CONTAINER OF SALSA THE KIND THAT IS IN THE REFRIDGERATOR SEC.,
PEPPER AND CUMIN TO TASTE.

PUT THE CHICKEN BROTH AND THE SALSA IN A BIG PAN BRING TO BOIL
AND THEN ADD ALL THE INGREDIENTS SIMMER FOR AN HOUR OR SO.

I ALWAYS MAKE SURE TO DRAIN AND RINSE THE BEANS TO GET RID OF SOME OF THE SODIUM.

The "dried" beans threw me too??? We certainly don't eat them dried! I can't imagine they are much diff canned? Debra, I was surprised at the list too. VERY unusual. The article DID talk about bright colored veggies & fruits though. Let me dig it out of the trash and I'll report back later today or tomorrow.

Sounds very healthy, but how many are you serving? Sounds like it could feed an army, no? By the way, Dr. Weil mentioned today that cumin is another anti-oxidant, and we all know how good tomatoes are for us, so your recipe really is super healthy. :)

Hello,

Just wondering...On the top 20 best antioxidant foods it list two beans "dried". Do they mean to say "not in a can" or "freeze dried"?

Hi Deb,

The bean article was in the Spring 2004 edition (Strawberry cover) in the Nutrition Watch section.

I really enjoy the magazine. I've made the black bean with corn & mango salad from the summer edition nearly every week.

Anyone trying to add nutrient dense foods to their diet should give this magazine "Eating Well" a look. Most of the recipes are easy to prepare.

I thought Nancy's idea of grinding the dried beans was a hoot!

I've never read that canned beans are less nutritious than cooking your own except for the sodium. If you rinse canned beans, it seems that the sodium problem is removed. Canned beans are a great convenience food.

A pot of beans simmering on the stove has no appeal right now. If anyone wonders where their summer went, it's right here in southern California. Triple diget heat & high humidity. But we don't have hurricanes!
