...but didn't use all of it, can I refreeze it safely? I had some leftover quesadilla mix in the freezer, and I only used part of it for supper. We going out tomorrow night and I hate to throw it out...

What's quesadilla mix? If its meat, then, no you can't. If its cheese or veggie you should be ok. Or cook it, then toss it back in the freezer.

Safety-wise, it looks to be OK if the food is cooked, but there could be some loss in quality due to moisture loss.

Basically what Gayle said...I have often heard that it won't hurt you/make you sick but can lose some of it's flavor/vitamins and such...
