Hosting Family Thanksgiving Dinner

I just made a recipe tonight, from this month's Bon Appetit, roasted sweet potatoes with olive oil and garlic, topped with fried sage leaves. It was quite tasty.
 
Using sweet potatoes, but...

I find myself hosting DHs family for thanksgiving what are some healthy sweet potatoe recipes?

..not really in a healthy way - I'm making Impossible Sweet Potato Pie. Hey, it's only one day - I intend to really hit the dessert table hard! Don't get in my way!!!
 
Peel and dice sweet potatoes and bake at 350 in some apple juice until soft. Mash and top with a bit of maple syrup and maybe some chopped toasted nuts (pecans or walnuts, or a mix of both).
 
Years ago I made a recipe that layered sweet potatoes with slices of tart green apples. There was some amount of maple syrup put on, but I lost the recipe. It was so good -- the first way I ever liked sweet potatoes (because they weren't so darn sweet!). I wrote to Bon Appetite (where I found the recipe orginially), but they couldn't help me..... rats! Someone with some kitchen experience could probably come up with a good sub though.....

Let me find my MIL's sweet potato casserole recipe and I'll post it. It has an oatmeal/ brown sugar crunchy topping and is sooo good! I just made it w/ less butter and tweaked the recipe a bit and everyone loved it last T'giving!
