You're posting so many great recipes I'm in a perpetual state of drool!

Do you have any recipes for really good, low-fat, high-fiber, lowER in sugar COOKIES that you would care to impart?

oats: high fiber and other great stuff
egg: good for you too
very little butter: unbleivabley littel
sugar.... well.. you control how much.

simple and great...
my favorite..... and very good on the conscience
oats are great for you too.

beat in half cup sugar
stir in 2 teaspoons melted butter
one cup oatmeal (uncooked)
one forth teaspoon salt

arrange by teaspoon fulls one and half inches apart... on well buttered sheet. spread in rounds with knife dipped in cold water...

bake 325 about 10 minutes on buttered tray.

these guys like to stick.. but they are good in crumbs if you have to scrape them off!

supposed to make 36.... i have no idea how!!
 
I'm sure I do, I'll have to do some hunting. I have a big notebook with clippings and internet printout recipes. I used to make a good oatmeal/raisin cookie, I do remember that.

anyone ever cook bananas?
or plantains?

they turn into the richest sweetest desert with nothing added!

i just put a tiny bit of butter to keep them from sticking in a frying pan and slice them lengthwise... you can half them with peels or long slices without peels..
and when you cook them they turn like custard.....

(i just made some for my son and thought of you all...sometimes i just stick them in the mirco when they arent quite ripe and get good results too)

I have had bananas cut lengthwise,skin on, with a little butter and brown sugar on them and then put under the broiler for a bit....till everying is bubbly. You can just scoop them to eat right from the skins!

I got this years ago and they used diet margarine and a lo-cal brown sugar.

Much the same as your recipe, cinza, but with a twist. They are yummy :9
