No pressure, or anything, since I know you have a life just like everybody else. I've been looking forward to the recipes you've been posting. You're taste buds sure do know what a gal likes!!! I'm going to stop the whining and buy THE CAKE MIX DOCTOR; however, I was wondering if you have any yummy salads with beans or chicken, dips, or crazy side dishes that you can recommend?? Those wedgies you posted were simply... :9 Thanks, and I'm sorry for being pushy.
 
I got lazy for a week...

...with the new job and all. I made a dessert last week called "Peanut Butter Chocolate Bars" from my new favorite cook book, the Cake Mix Doctor. Deb H got to try them, so we should ask for her opinion.

1 package plain yellow cake mix
1 c. smooth peanut butter
1/2 c. margarine melted
2 large eggs
1 -12oz package chocolate chips
1 - 14 oz can condensed milk
2 Tble margarine
1 C. sweetened coconut
1 c. chopped pecans
2 tsp vanilla extract

1. Preheat oven to 325 degrees. Place rack in center of oven

2. Place the cake mix, peanut butter, melted margarine, and eggs in a large mixing bowl. Mix until well blended...mixture will be very thick. Reserve 1-1/2 c. for topping. Transfer remining crust mixture to an ungreased 13X9" pan, and press the crust evenly over the bottom of the pan so that it reaches all sides. Set aside.

3. For the filling, place the chocolate chips, condensed milk and 2 Tble margarine in a medium-size heavy saucepan oever how heat. Stir and cook until the chocolate is melted and the mixtue is well combined, 3 to 4 minutes. Remove the pan from the heat and stir in the coconut, pecans, and vanilla until well distributed. Pour the chocolate mixture over the crust, and spread it evenly with the rubber spatula so that it reaches the sides of the pan. Using your fingertips, crumble the reserved crust, and scatter it evenly over the chocolate. Place the pan in the oven.

4. Bake the cake until it is light brown, 25 minutes or a little longer. Remove the pan from the oven and place it on a wire rack to cool for 30 minutes.

This is VERY rich and will set your teeth on edge. Just right in my book! :9:9:9:9:9:9:9:9:9:9:9:9:9:9

I'm not much on trying side dishes....my love is dessert recipes. I REALLY love my pig out days....and I have to work out hard for them. But it's worth it.
