Apricot-Danish French Toast
Makes two servings
1/3 cup low-fat ricotta cheese
1 1/4 tsp. vanilla extract, divided
2 tsp. Powdered sugar, divided
1/4 cup liquid egg substitute
1/4 cup fat-free milk
4 slices whole-wheat bread
4 tsp. “all fruit” apricot jam, divided (I used seedless raspberry)
Butter cooking spray
Juice from 1/2 lemon
In a small bowl, mix ricotta cheese, 1/4 tsp. vanilla and 1 tsp. powdered sugar; set aside. In a separate bowl combine egg substitute, 1 tsp. vanilla and milk; set aside. Lay single slices of bread on a flat surface, then spread 2 tsp. jam on each of two slices. Make sure jam is evenly spread to the edges. On each of the remaining two slices of bread, spread about 2 Tbsp. Ricotta cheese mixture. Spread evenly to edges. Lightly press a jam slice with a ricotta slice so the fillings press together. Dip each sandwich in the egg mixture until bread is completely submersed. Heat butter cooking spray in skillet, then grill sandwiches over medium heat until golden-brown on both sides. Slice each sandwich diagonally. Sprinkle or sift ½ tsp. powdered sugar on top of each, then drizzle with lemon juice. Makes two servings.
Per serving: 260 calories, 16 g protein, 42 g carbs., 5 g fat, 4 g fiber.
**** I do not like ricotta but thought I would try this and I really like it. So don’t pass it up if you are not a ricotta lover.
