Help! Cooking Garbanzo beans after soaking...

all the recipe says is to cook for an hour - at what heat? Do I bring to a boil and then simmer, boil for an hour (doubt that, but thought I'd throw it in there), or medium heat the whole time???? BTW, trying some recipes in Tosca's new cookbook, great cookbook, looks like some wonderful recipes.

Yes, bring them to a boil for a few minutes, then reduce to a gentle simmer. Try one after an hour and see how they are doing. Cooking time for beans is dependent on how old they are and how they've been stored.
I've had garbanzos take 2-3 hours. And also had them cook in an hour.
I cook beans in an ovenproof casserole (Le Cruset). I bring them to a boil on the stovetop, put the cover on and transfer to a 250 degree oven for the cooking time. This maintains a nice low simmer, something either me or my stove is not all that good at :D
