Hi Everyone,
I decided to make homemade pizza dough tonight but to make it healthy substitued the flour for whole wheat flour. As I'm mixing I read on the flour bag that to substitute with whole wheat flour to replace it with half the amount of regular flour. Uh oh, so now I'm getting ready to knead it and in the meantime came here to find out if I've completely ruined dinner? I checked on the internet and all the recipes with whole wheat pizza crust say to add honey with the yeast mixture. Not sure what to do, has anyone tried making it like this before? Please help....Lisa :eek:
 
If you use straight up whole wheat flour, you'll end up with a really thick, tough, and hard to knead dough, which will give you a dry crust. You're better off using half whole wheat and half white. Or you can try half whole wheat, quarter spelt, and quarter white. It doesn't really matter if you use honey or sugar to make the yeast work, but I find honey tastes better with wheat than sugar. Personal preference. You can also use warm milk (skim) instead of water, it will make the dough a bit softer especially if you're using wheat flour, and it doesn't change the taste. I don't know if soy milk will work or not, I've never tried. This probably found you too late for dinner tonight, but I hope all came out ok. If not, maybe you can tweak it a little next time!!
