2 large eggs, room temp
3 large egg whites, room temp
1 tsp. vanilla extract
1 tsp. cinnamon
1/2 tsp. salt
1 tsp. baking powder
1/2 cup sugar (yes, I know!)
1/4 c. light brown sugar
2 3/4 cups old fashioned rolled oats
1/3 cup whole wheat flour
Preheat oven to 350 degrees. Spray two baking sheets with cooking spray
In the bowl of an electric mixer, combine eggs, egg whites, vanilla, cinnamon, salt, baking powder, and sugars. Beat at high speed until doubled in volume and mixture forms a ribbon when the beaters are raised. Using a rubber spatula, fold in the oats and flour.
Drop tablespoon sized mounds of dough onto the baking sheets, leaving about 1" between each one. Bake 15-20 minutes until lightly browned. Immediately lift the cookes from the baking sheets and cool on wire racks.
