This past summer, somebody suggested freezing home-grown tomatoes. I had an OVERabundance from my home garden, so I figured I'd try it. I individually wrapped about 20 tomatoes, put them in a large freezer bag, and stuck them in the chest freezer. I just made a crockpot soup that called for a can of diced tomatoes with their juice. So I pulled out 2 frozen toms, rinsed them under hot water. The skin peeled off BEAUTIFULLY and diced it up! It was so easy! I'll have the soup tonight, so I'll let you know how the tomatoes turned out, but it looks just the same!
