My DH and I sat down and made a list of charities/causes that we believe in and those are the only ones we support with donations and in our wills. When asked to donate to others, we simply say we are giving elsewhere but good luck.
We don't have children but many nephews so I have plenty of wrapping paper and magazines - no junk food, they know better!
BTW, most phone solitications aren't even the actual charity but a telecenter paid to fundraise for them. I never donate over the phone but usually ask if the caller is a voluteer or paid employee. If it's a volunteer, I politely ask to be removed from their call list. If it's an employee, I hang up - it doesn't do any good to request to be removed!
Giving is supposed to make you feel good - if it doesn't, don't do it
