Yesterday was a bad day. At the lunch meeting they only had barbeque and the only options were meat, bean (cooked with bacon), potato salad and cole slaw. I had some chicken, beans and cole slaw and a slice of white bread!!! I felt so bad because it tasted so good.

We also decided to go out to dinner at the vegan restaurant because I was craving that vegan BLT. They were out of tempeh, so I got a fallafal burger with side of "chicken" noodle soup. Not as good as the BLT but was pretty good.

Today I have another lunch meeting where food is provided so won't have a choice again.


Today's menu:

B: fruit smoothie and coffee
S: 1/2 of Ezekiel muffin
L: lunch meeting so I have no idea what will be served - boo
S: 2 clementines and other 1/2 of muffin
D: margarita pizza with pear salad (spring mix, chopped up pear, walnuts, dried cranberries) and beans

Also, I am newly pregnant (got confirming blood test results today!) so that is why I have been eating the muffin as snacks during the day to always keep some carbs on my tummy. It have had a little nausea but it is gone if I nibble on some bread.

Today's Menu:
Breakfast: Frozen blueberries, ground flax seed, rice milk, rice protein powder blended into a smoothie
Snack: Kashi go Lean Almond Flax Cereal, apple
Lunch: Ezekial Pita bread filled with spicey black beans and tomatoes, apple
Snack: Banana Carob Hemp Smoothie
Dinner: I am planning on making the Asian tofu and the sesame asparaguas from the Vegan with a Vengence cookbook. I will probably also have a salad.
 
Lunch was another bust today. I had to eat what was available at the lunch meeting and I was starving!

Chicken with artichoke hearts, sundried tomatos and mushrooms (seemed somewhat oily), some sort of vegetable rice (white), vegetable mixture with bok choy, brocolli, asparagus and green beans, and spinach salad with walnuts and blueberries and a raspberry dressing. So I had tons of veggies, but also had chicken and probably tons of fat. Oh, and I had a few bites of chocolate cake too. }( I was just so starving and I could still eat more food.

Diane how exciting :) Congratulations :) Is this your first or do you already have some little munchins? I hope you have a healthy pregnancy.

Yesterday was all fruit with some vegies for tea.

This is our first baby so we are excited and nervous. I have already read a ton of stuff about vegan diet during pregnancy and I just need to watch my protein, calcium, iron, etc. I take a prenatal vitamin as well. But I have decided that when I don't really have a good option I will eat meat to make sure I get enough protein. The past two days I had catered lunches during meetings and didn't really have a choice. I could have not eaten the meat and would be starving for 2 hours until the meeting was done but that wouldn't be a good idea. Plus people at work would think I was anorexic or something.
 
Diane- Congratultions ! Stay healthy and well rested and hydrated! I am sure you will get lots of advice around here from well meaning Mamas. :)

s- banana
L- green salad with TVP chili and soy cheese and salsa
S- few triscuit crackers and coffee
D- Seitan Meatballs and pasta and tomatoe sauce, large salad ( from this month's Veg Times magazine) it was just OK. I would have been happy with the whole grain pasta and marinara only and my family likes turkey meatballs better....
S- handfull of choc chips and a cookie (fresh from the oven DD made):eek:
(I am now too stuffed )
