The weekend went well. I did have some pretzels Sat for my salt fix...at least not the fat in them as there is in the chips.

Yesterday
peanut butter on toast and coffee before my long run
B: smoothie, and scrambled egg beaters with some tempeh strips (like bacon)
L: Big salad using some garbanzo beans
Snack: genisoy bar and some pieces of smoked fish (my stray from vegetarianism when my DH gets fresh fish!)
D: Quorn patty, steamed broccoli, salad and tater tots
Dessert: fruit smoothie split with DH
 
Hi ladies -

The weekend went well. We went to that vegan restaurant twice this weekend because I just LOVE that tempeh BLT and can't get enough of it.

Yesterday was good:

B: 2 Kashi Go Lean waffles with almond butter and blackstrap molassas on top (for calcium and iron)
L: homemade hummus and salad
S: veggie chips
D: vegetarian chili and salad.

Here is the recipe for the chili, it was so yummy.

2 cans pinto beans (drained and rinsed)
1 16 oz jar of prepared salsa (mild or medium)
1 cup frozen corn (defrosted)
1 12-16 oz package of soy crumbles
1/2 cup water
1 tsp cumin

Just put them all together in a pot, bring to a simmer and cook over medium-low covered for 15 min. Serve with stone ground tortilla chips (we just baked cut up pieces of whole wheat tortilla to make chips) and a side salad. Makes 6 servings.

Today:

B: steel cut oats with flaxseed and soy milk
S: 1/2 english muffin
L: I think a ww wrap with lettuce, tomato, black beans, avocado and some other stuff.
S: chocolate soy milk (brought one of those travel size ones for kids to have as a snack at work)
D: shake and bake tofu with sweet potato, salad, maple glazed baked carrots, and zucchini

Mine was too. DH and I ate out on Friday night and we each had a tuna appetizer and salad only. Of course we had a couple of drinks but that was it.

Yesterday we had the family dinner and DH requested fish, so we had salmon, a huge platter of roasted peppers, asparagus, eggplant and mushrooms and green salad and I made bulgur (like rice) it looked like couscous. We served BBQ chicken for FIL who won't eat any thing healthy. Oh, and we had whole wheat rolls (but I didn't indulge) DD made a cheesecake which (also declined) However, I did have a bit of the cherry topping and some dark chocolate later.

We went to a Thai restaurant for lunch and I got a tofu and vegetable stir fry. I am sure it was full of fat and oil, but I was so hungry I ate the whole thing. And I could still have eaten more. I hope I don't get too fat during this pregnancy!
