ETL Challenge Sat 1-6

Good morning ETLers

My breakfast and lunch were the same. For dinner I had a huge burrito from one of our local places. Flour tortilla with black beans, cabbage, rice, jalapeños and I add my own salsa and soy cheese and some Tofutti sour cream on top. It was soooo good. I even have some left as I could not eat it all, plus a big salad. Still doing well with no chips but I did eat some pistachios...

Barb...I ave read about broccoli having alot of protein in it, I just never thought about how much...:)

Judy...it seems no matter what I always have a fruit smoothie after a workout. I really think it helps in muscle recovery. I love tofu in soup...I usually grate it.

Diane..I really don't think going out one night a week to eat is a problem if you eat healthy all week...I always try to stick to mexican food as it is easier to be vegetarian there...:)..it amazes me how much iceberg lettuce is so unappealing! I have eaten romaine and spinach in salads for over 2 years and iceberg seems nasty...

Maggie..I hope you can find the dressing. Actually most of the Italians will work, just check the fat content. Don;t worry about blowing the ETL way of eating when you have a bug! Especially a stomach bug as I know I'd be having crackers!

Marnie...I get confused with amino acids myself. One thing I remember about Fuhrman's book, if it weight you want to loose in the 1st 6 weeks, then yes follow the strict diet. If that does not matter as much then a few cheats like starches are fine. I am sorry about the tough family situation. I have a lentil soup recipe with chard? In fact Barb mentioned it in her post...it is a good soup.

Kim..I know for me in the 1st 6 weeks, I added beans to every salad I ate! I also ate fruit in between meals. It was summer and the watermelon was good. The brand of soymilk I use is Silk.

Tina...a mini chocolate bar isn't bad. Enjoy your happy hour..:)

Jacque...your menu looks good...but I have to say that the vegetarian chicken sandwich threw me a bit...chicken is not vegetarian in any way...:)

Oh I guess I should have put Vegetarian "Chicken" Sandwich to clarify. My local health food store sells premade Vegan meals (Pad Thai, TLT (*Tempeph Lettuce Tomato*) They are all on sprouted grain bread and are all really tastey. I think actually "chicken" part is made with textured vegetable protein. It is kind of chewy but that is it. I am an ethical Vegan and meat does not appeal to me anymore.

Also those baked tofu squares sound really good. Sometimes I want to throw a quick protein source onto my salads and those sound like a good option.

I also read "Becoming Vegan" and I consider it my Bible for nutrition information. I like how is seemed unbaised and gave you the pros and cons of differant suitations.



For breakfast: Quinio with bluberries, Flax Seed, rice protein and rice milk
Post Workout Snack: Banana Carob Smoothie
Lunch: Salad with Chickpeas and Annies Organic Goddess Dressing (I am going to make a lower fat salad dressing tonight to use), baby carrots
Dinner: Probably a big salad
 
Hi Ladies -

Well, I totally blew it at the wine bar last night with my girlfriends. I know that it was my cheat meal of the week, but I felt so horrible afterwards. We ordered fries and these lamb meatballs as appetizers, then I had sweet potato gnoichi (sp?) with mushrooms for dinner, but it was covered in some kind of sauce that didn't seem healthy. Then had a couple bites of caramel bread pudding for dessert (now that was yummy!). Anyway, I got home and felt totally sick to my stomach. I think it was just all the fat in the meal, it felt so gross. I guess my stomach is not used to that type of food anymore.

Anyway, DH and I made out the shopping list today and decided to drop the 2 chicken dishes that we have a week. I end up eating chicken a couple times a week during lunches already, so we should do what we can not to eat meat when we are at home. My menu for today:

B: steet cut oats with some berries
L: spinach salad at la madeleine - spinach, strawberries, walnuts and mushrooms with balsamic vingerette.
S: I brought so clementines, cherry tomatos and raspberries to work for snacks since I will be here all day.
D: mixed veggie plate - big baked sweet potato (our fav), steamed brocolli with chedder rice cheese, roasted asparagus and tomatoes with basil, mixed green salad. Clementines for dessert - I will be so sad when these go out of season, they are the perfect portable snack.

well yesterday (Saturday) I had

B - fruit
S - fruit
L - oats, almonds, pumpkin seeds and soy yogurt
S - fruit
D - homemade chickpea burgers and salad.

Thanks Carole, I think I will try adding beans to my salads too. It is summer here at the moment so all the yummy fruit is in abundance.

Hey Diane! Don't worry about the wine bar ;) I'm sorry you felt sick afterwards. Last night, I went out and had a beer and pizza and one greassssy onion ring. I felt sick too afterwards! It goes down so easy, but later it's regretful. Oh well, today is always a brand new day :)

meals:
b- 1 pancake and a banana and 1 once nuts ( had to fuel up for a long dog walk and then a 15 mile bike ride)
l- came home starving and had a huge salad, a few bites of lasagna that my hubby warmed up , a few cups of melon
s- none, felt full still!
d- prob lots of fruit and a salad

I was at a kids’ event all day today and luckily managed to think ahead this morning and make this big mix of broccoli, chic peas, carrots, brown rice – mixed with a little tahini, balsamic vinegar and cumin and water. It was good and decent for travel in tupperware. It’s a spinoff on the recipe here for peas, p.b. & soymilk from a few days ago. So thank you!

Carole—that burrito sounds yummalicious! I didn’t know about Tofutti sour cream. I will have to pick some up. Good job on avoiding the chips!

Diane—don’t worry about the one meal, but I’m sorry you felt ill afterwards. Your meal plan for today sounds good and it’s great your DH is on the same page with you. My DH is trying to lose weight and is mostly vegan now --probably because I do the majority of the cooking, but he likes the whole way of thinking, which is a big plus!

Jacque- I’m glad you like Becoming Vegan, too. I really think the book is well organized and is a good reference. I was impressed that there was some info in it for vegan eating for athletes and I especially liked the menus at different calorie levels to learn about putting servings from different food groups together.

Kim—the chicpea burgers sound good. What did you add to them besides chicpeas?


Tina –I love onion rings – and had a recipe for “healthier” onion rings that you made by dipping them in buttermilk and than a healthier flour mixture. Maybe I’ll look it up and see if it would work with soy milk…….

When I have free time I like to fool around with transforming recipes. Sometimes it works nicely. Sometimes it’s a dud. **Thud*** :+

Sounds like you are all sticking to the plan pretty well.

Carol--I checked out your picture trail. Are you a photographer as well as a totally buff marathon runner? Beautiful pictures.

Diane--I would not worry about the one meal.

Kim--butts and guts about killed me the first time I did it. Never have I had such DOMS

I am still feeling sick, but I did eat some pineapple today...and some scrambled eggs. I guess I'm just going to have to wait until I'm all better before I do the 6 week plan.
