Good morning ETLers

Yesterday went well, I did have a few pretzels for those after run carb cravings!

Before my run, I ate half a slice of whole wheat toast with peanut butter. I drink a sports drink called Accelrade during my run, then after was:
B: smoothie
L: quesadilla with soy cheese, red onions, tofutti, homemade salsa and a big salad with some pinto beans.
Snack: genisoy protein bar
D: Portobello mushroom sandwiches on half a sourdough roll with chard, onions tomatos and some Veganaisse, steamed cauliflower, and a big salad.
Dessert.: smoothie split with my DH.

Barb...that spread sounds really good. I will have to try it.

Jacque...I have not tried making my own seitan yet. I know I should. I have a seitan stroganoff recipe and if you want it let me know, I will post it. I think last week could be a transition week for most of us. This week should be better...:)

Tina..some frozen fruit I don't like much. I normally use strawberries, peaches, blueberries and blackberries, banana's are also good in a smoothie. I have the carb cravings too as far as chips, but now that I have avoided them the cravings lessen alot.

Kim...good job skipping the chocolate!! Seitan is a wheat protein made from wheat gluten. It resembles meat and I think it is very tasty. You might be able to find it in a Health Food store. So you live in Australia...cool! I have always wanted to visit there...

Diane...so what is margarita pizza?...Sounds good...:)

Maggie...congrats on the weight loss. Alot of time the 1st weight you loose is water but I feel it takes some of the bloated feeling away and that is always good! I hope you feel better today.

Carole- your quesadilla sounds tasty. It has inspired me. I usually just do soy cheese melted on a whole wheat or lo carb wrap.

This weekend we celebrated my Dad's 85th birthday. He came over for lunch. We served cold cuts and rolls and roasted peppers raw veggies and hummus... and chips and salsa. We also had beans and greens a favorite of his and mine! We got the smallest cake we could for him and I had a tiny slice and sent the rest home with him.

Yesterday:
revival soy protein bar, banana
Greens and beans, apple
Homemade Gnocci ( no eggs) w/ seafood marinara (home made) & large salad, 3 little pieces chocolate ( better choice than apple pie) red wine, half of a crusty roll dipped in olive oil.

today -
fruit smoothie
black bean chili left over to clean out fridge- add some veggies to it
two apples

Heary Minestrone with Barley, Sage and Beans {(Cooking Light current issue) I will substitute veggie meat strips for the bacon and veg. broth for the chicken broth} and large green salad

Hi ladies -

A margarita pizza has tons of fresh tomato slices and chopped up fresh basil with mozarella. We used mozerella flavored rice cheese. There is no tomato sauce on it. It is very yummy.

Today I have an interview lunch with a recruit at a place I know has good salads, but I am trying to figure out what kind of protein to have on it? I don't think there are any bean or legumes as options. If I just get a salad loaded with veggies, will I get enough protein from the veggies to get me through the day?

Today's menu:

B: fruit smoothie (banana, mixed frozen berries, flaxseed, protein powder and soy milk)
L: Salad (at this place I usually get spinach and mixed greens with grilled asparagus and zucchini, tomatos, avocado and nuts).
D: probably a big salad with an egg white omelette with mushrooms and tomatoes and rice cheese on the side.

By the way, I got a bit further through Eat to Live this weekend (I still haven't read the whole thing but skimmed through most of it). The more I read it, the more I am convinced that I should go vegan. Right now DH and I are having mostly vegan at home, but having egg whites once or twice a week. For work lunches, I am going to try to end my dependency on chicken for protein in my salads. Is there anything y'all can think of that I can bring to work to eat after lunch if I don't get any protein in my salad? I wouldn't bring it with me too the lunch, since most of these are professional lunches with other lawyers and I would probably get some weird looks if I brought my own food to a nice restaurant. So it would be something I would have to eat by itself.
 
Diane-
I might bring a container of frozen peas for a snack. They can defroston their own or yu can microwave them. Almonds travel well; and they are protein rich, just keep the portion reasonable. They will keep you full.
I also will eat the south beach bars in a pinch either the snack size or the meal size. ( They may not be vegan)

I just made a tasty lunch and wanted to share:

Broccoli Peanut Wrap
1 high fiber wrap
half of a package of broccoli slaw mix about 3-4 cups (from produce section of grocery) tossed with 2T Paul Newmans LIGHT Sesame ginger dressing

1-2 TBSP natural Peanut butter

spread PB on wrap. put some broccoli slaw mixed with dressing on and wrap. Eat the rest of the slaw on the side.

ETA- I wasn't in the mood for leftover black bean chili

Carole: Thanks but I already have one in my Vegan Vengance cookbook (despite the kind of weird name it is my favirote cookbook). My seitan did turn out good and it was easy to make. It is really cost effective too. I made a huge batch of seitan for what a little dinky thing of it costs at the health food store. :)

Judy: That is neat that you celebrated and occasion without all the guilt. Your menu sounded like it would be both tastey and guilt free. I love hummus.

Diane: Maybe try some of the differant jerkys that are made from either tofu or seitan? You could maybe keep a couple packs in your desk at work and then have a little for a quick snack before you go to lunch? I know my local health food store sells them. I am not a big fan of the primal strips made from seitan but I like the tofurkey jerky. They are all pretty high in protein. If you cannot find them locally there are some sites that sell them online.

Barb: I love fresh figs but they are hard to come by in my area so I usually get dried. I get them in the bulk section of my local health food store. About three fruits has about 120 calories and is a good source of calcuim and iron. I usually just eat them plan for a snack




Today's Food:
Breakfast: Quinio, berries, flax seed and rice milk
Snack: Grapefruit
Lunch: Chickpea and kale curry
Snack: Banana carob smoothie, a handful of dried figs and berries
Dinner: "Chicken" Style Seitan (seita made with rosemerry, thyme sage ect) and a huge salad
 
Good idea about the tofukey jerky. That would be easy to eat my desk without a big fuss. I will try to find some.

For lunch I had salad on romaine with aspargus, zucchini, tomatos, marinated mushrooms, almonds, avocado and a tiny bit of fat free cilantro dressing. It was very good. I am finally getting used to eating my salads without much dressing or essentially dry. I used to drown it is dressing!
 
What is everyone's thoughts on caffeine? I haven't finished the book yet and I don't know if he talks about it. I have cut down my caffeine to one cup a day. I have a coffee break in an hour with some friends and I am planning on getting a latte with soy milk and sugar free vanilla.
 
Hi everyone,
I'm getting so many great ideas from everyone's food/meal plans. It's neat how we all put things together differently.

I made some lentil curry from Vegan Planet today--it's pretty good. I also made the Lentil-Chard soup, but haven't tried it yet & a batch of the bulgur burgers. (It's a big cooking day for me today.) I bought some Quinoa and Amaranth to try to cook sometime later this week.

Carole--great job adding all the veggies to your meals. The quesadillas and the mushroom sandwich sound really great.

Judy--I like the slaw recipe with a wrap. Great lunch idea. Congrats to your dad. how did you learn to make Gnocci? I love it...

Diane--I made a lot of gradual changes toward eating Vegan--based on how I felt as I went along. If dropping something produced a good change in how I felt, I kept going. If I were to add an animal product back, it would be egg whites or eggs. Dropping dairy has had the biggest beneift for me. About caffeine? I used to drink a lot more than I do now, but found caffeine-free was not for me. (LOL) To cut back, I mix caf+decaf until I could drop the caf.

Jacque--Thanks for the fig info. I will look for them.
I have Vegan with a Vengeance and love that cookbook. She is a funny author. The curried Split Pea soup is one of my favorites. I have not made Seitan. I did keep transforming one of the PB cookie recipes into an energy bar by subbing applesauce for the oil. I think it's the Giantoid PB cookie recipe. I might have added an egg back into it.

You are all inspiring me to eat more raw veggies!

Hiya everyone! Just got home- super busy day today! I had a full day of teaching, and went to yoga this afternoon. Ate a huge dinner then I am going to chill out and watch tv before bed.

meals:
b- strawberries, banana, rasperries
s- oatmeal with a touch of honey
l- hummus and raw veggies, 1 slice homemade pizza
s- grapes and 5 crackers
d- huge salad, rice, and 1 homemade crabcake, baked
s- 1 apple with peanut butter

I hope you all had a great day!! sorry so short, but I'll "See" you all tomorrow!!
 
The margarita pizza and the brocollipeanut wrap wrap both sound really good.

Well, I knew that 4lbs was too good to be true, but I did lose 1.5 last week and I am satisfied with that.

I am feeling better, so I was able to eat better today.

Breakfast: cereal with banana and rice milk
Lunch: carrots, fresh spinach with strawberries and kiwi
Snack: a few chocolate chips
Dinner: rice noodles with cucumber, green peppers, a little sesame oil, rice wine vinegar and a little chicken.

Am I ever going to start the 6 week plan? I'm doing more of the life plan right now. The last time I did the 6 week plan it was the summer and I just think its hard to eat like that in the dead of winter. I think comfort food right now--excuses, excuses, and mid-afternoon stress:p :7 :p.

We ordered a treadmill! I'm so stoked!
