DH has decided to be a vegetarian - vegetarians help me out!

Well now that DH is giving up meat I have to replace some of my tried and true/quick meat meals with vegetarian meals. I have two cookbooks that I like and wondered if someone could refer me to some others. Here is what I have:

What I am looking for are other cookbooks that have meals that are not overly complicated, or ask for unusual ingrediants (I do NOT have time to run all around to make one meal), and it has to have the nutritional breakdown of each meal. Many vegetarian meals are actually not very healthy and are loaded with fats such as yogurts, creams, cheeses and so forth. I'd really appreciate any help you can give me! We already eat a lot of vegetarian meals as it is, but I need some more inspiration as I'm a meat lover at heart!
 
Julie - I can't recommend any cookbooks because I'm a lousy and lazy cook, and just tend to throw things together. But I do think one extra stop that would be worth your time is a health food store that carries TVP (texturized vegetable protein). It's a soy product. What you do, is rehydrate it with hot water (equal parts TVP and water). It just takes a few minutes. Then it is excellent in stuff like spaghetti sauce or other casserole-type dishes that call for ground beef. It has no taste. None at all. But it absorbs other flavors, just as tofu or other soy products do. So in stuff like sphaghetti, the seasonings would be plenty of flavor... I think you get the idea. It's very flexible and keeps forever.
 
Good for your DH!!! Julie...those cookbooks look like what you need. I will also recommend a very good site with many recipes and discussion boards to help you... www.vegsource.com Most of my cookbooks are vegan. My fav is The Vegan Planet as it has 400 recipes! But no breakdown of each meal. I know there are more vegetarians/vegans here that can help...Kathyrn and Clare come to mind....:)...Carole
 
Julie, I am recent convert to vegetarianism myself, so I spent an hour at Borders reading through all the veggie cookbooks. I finally settled on The Vegetarian Family Cookbook, by Nava Atlas (which is your second choice there), and it is fabulous! The recipes are quick and easy, the nutritional info is there, and many recipes have vegan and dairy options. Oh, and the recipes are tasty too!

I also like the searchable recipe database on www.vegetariantimes.com. Lots of choices there! :)
