I made this last night- it was a little different but good. I think it needs a little more sauce or something, but otherwise tasty and a good way to get in veggies.

Mexican Broccoli Casserole

1 package of Kroger Organic Fresh Broccoli, lightly steamed and chopped
1 can black beans, drained and rinsed
1 can Rotel diced tomatoes- Mexican Lime and Cilantro
¼ cup chopped fresh cilantro
1 can green chile enchilada sauce (Old El Paso Mild)
1 ½ cups fat free mozzarella cheese (180 grams)
½ cup onion, chopped
Garlic
8 corn tortillas (Kroger taco size)

Saute onion and garlic in Pam unless softened. Mix in bowl with broccoli, black beans, tomatoes, cheese, cilantro. Pour a bit of sauce in bottom of 9x13 glass pan- put down 4 tortillas. Spread half broccoli mixture over it and a bit more sauce; put down other 4 tortillas, then rest of mixture and rest of sauce. Cover and bake for 35-40 minutes.

Other ideas: Add red pepper, cumin, lime juice or other spices.

1284 cal/ 207 carbs / 13 fat / 91 protein / 43 fiber

If serving 4:
321 cal / 52 carbs / 3 fat / 23 protein / 11 fiber
 
Kate, I'd love to meet for lunch, but I'm afraid you would be so nice to me that I would cry. I'm kind of a mess today. But another time! I know the house you used to live in, I run by there all the time.

Patti, that recipe looks good, I'll have to try it. Do you think it would freeze well? And, I know, a fresh start sounds appealing.

Anne: Yep, I think it would freeze very well. Jeff doesn't eat cooked broccoli so I'm pretty much the only taker on this. I just put it in individual servings- one in the fridge for lunch today and the other two in the freezer for me in a week or two. Anne, I wish I could make what you're going through a little easier.
 
anne, after seeing your pros and cons, i'd say keep it if you can hire out the work for 1 yr. see is the pros stay there even with jim gone. if they don't move on. if they do, get a good jack-of-all-trades to be on tap.

oh, the joys of a family business! FIl heard Mike and I duking it out on the ohone this morning. He wanted to help and just came to pick up the big girls. They're off to lunch and a museum. To say I am embarrassed that he heard that is a mild understatement. As much as I like help I see getting it as a sign of weakness.:( So, no lunch and shopping with DDs. Maybe J and I will go get groceries.

Awww, Kate, I hear you. I would be embarrassed too- my ILs heard an argument of mine and Jeff's from over 10 years ago and I can still blush thinking about it. Help is a wonderful thing, not a sign of anything wrong or any weakness! And what a nice guy your FIL is. :) Oh and LOL about the family business- I KNOW!

Kate, do this for me--close your eyes and say to yourself, "Help is not a bad thing. And needing help is not a bad thing." I think one of the worst things people to do themselves is think needing help is a negative. Everybody needs help sometimes. And people like to give help. I see it in this group here--you all have been hugely supportive of me and that is helpful. Please don't beat yourself up! But, I understand, too, that you'd be embarrassed. Spouse fights are private, I know that. I hope you enjoy the grocery shopping.

Can I join the pity party? I've determined that my bad sleep/sore throat/headaches are caused by sinus pain or an infection:( I do NOT feel well. I am sipping on some soup for lunch....

yea on the tooth, julia! and kate, i identify with the needing help/weakness mentality. i assume i have to do everything on my own and needing help means i cannot. it is an achilles heel. for today, just put it aside and enjoy some quiet julia time.

Hey girls, I'm tired - it's been a long day but another good day. Took girls to the park after dinner to ride bikes. They had a blast. Thinking of disney tomorrow since Annabel's teacher will not be there tomorrow so they canceled class (only in France...) - I feel bad for the parents who work. That would never be acceptable in the US!

Too exhausted for personals tonight and may be tomorrow as well. I was thinking I didn't want to miss a wo tomorrow but I'm really sore all over so prob could use a rest day.

All of you are welcome to come visit any time! I'd love visitors!!!

Work has been semi-productive, so that's a good thing. I'm really looking forward to my pedi. LOL, Morris, that's a good idea. I have been scheduling a massage once a month. The pedi is a bonus.

Hi ladies! Another drive-by post, but wanted to check-in. I went for my first run today and covered 3.2 miles despite the ankle still being a little swollen and tender. I was able to do 10min miles even with slowing down on the downhills. Anyway, family still here and it has been hectic. I have not been eating the greatest at dinnertime, but the other meals have been squeaky clean. Bfast today was kashi cereal and hoping I can reign in dinner time. So hard when family is here. Anyway, I miss chatting with you all and hope to be back on regularly next week.

Anne: Productive days are nice- love it when it all comes together. Enjoy your pedi tonight- can't think of anyone that deserves a little pampering more than you right now.

Morris: Glad DH is home and I laughed that he was sleeping too. It's been rainy here today too. Urgh, tired of rain.

Angie: Enjoy Disney tomorrow- like Kate said all of that walking makes it a perfect active rest day.

I will finish up my June rotation in 2 weeks and am wondering what to do b/t then and the RT. Hmm, maybe a week of CTX as designed? Or maybe 4DS? I don't want to do anything too ambitious or long since it will be interrupted...things to ponder. I love planning what to do next. I'm weird that way.

Dinner is buffalo burgers and butternut squash "fries". Maggie left with my dad for the night, so it's just me and the boys. :)
