I made this last night- it was a little different but good. I think it needs a little more sauce or something, but otherwise tasty and a good way to get in veggies.

Mexican Broccoli Casserole

1 package of Kroger Organic Fresh Broccoli, lightly steamed and chopped
1 can black beans, drained and rinsed
1 can Rotel diced tomatoes- Mexican Lime and Cilantro
¼ cup chopped fresh cilantro
1 can green chile enchilada sauce (Old El Paso Mild)
1 ½ cups fat free mozzarella cheese (180 grams)
½ cup onion, chopped
Garlic
8 corn tortillas (Kroger taco size)

Saute onion and garlic in Pam unless softened. Mix in bowl with broccoli, black beans, tomatoes, cheese, cilantro. Pour a bit of sauce in bottom of 9x13 glass pan- put down 4 tortillas. Spread half broccoli mixture over it and a bit more sauce; put down other 4 tortillas, then rest of mixture and rest of sauce. Cover and bake for 35-40 minutes.

Other ideas: Add red pepper, cumin, lime juice or other spices.

Stats for whole dish:
1284 cal/ 207 carbs / 13 fat / 91 protein / 43 fiber

If serving 4:
321 cal / 52 carbs / 3 fat / 23 protein / 11 fiber

Interesting, Robin! I'm the 3rd child too and my sister is the oldest and kind of the same way. Fortunately, she doesn't have kids, but she definitely uses my parents big time. Of course, they let her, but that's another story, isn't it? I also have a good head on my shoulders, most of the time.

And thanks for the suggestion, but I'm curious. Why do you think I should keep the house? I'm just asking because I need all the advice I can get, I'm definitely not thinking very straight these days. Here are the pros:

1. I love the house itself. It's very beautiful and it's very calming to me. I just feel better when I walk into that space.
2. I love the neighborhood. It's very safe and quiet and I have great running routes around it.
3. I have great neighbors. They will keep an eye out for me and help me out if needed.

Here are the cons:

1. It's a lot to take care of for one person. There's a huge lawn to mow and many, many flowerbeds to tend to.
2. I don't want to shovel in the winter.

So, a condo is appealing because it would take the maintenance stuff off my hands. Plus, the house is over 50 years old now and has a couple problems that need to be addressed, such as the basement that floods every time it rains hard.

What do you guys think? If I'm being too needy, just say so!

Anne after my husband passed away many people told me to sell the house. At the time I was under too much stress and grief. I had to hire a gardener to do my lawn and I had to shovel my own front walk:(. I'm glad I held onto the house because I was able to keep the equity. I lived in the house with my kids for about 5 years and then I moved because I was spending too much money trying to keep a old house in good shape. Now I understand why you will want to get rid of the house...because of repairs. If it's too much of a headache then you should move.

The bottom line is you should live and be happy. Can you find a condo in your neighborhood?

Thanks, Robin. No condos in my neighborhood, unfortunately. I found one online that I want to go look at, but I'm really leaning toward Morris's idea--stay in the house for a year and see if I still like it. I don't think I can find a condo that will bring me the same peace and tranquility my current house does.

I don't know why people would tell you to sell the house after your husband passed away. That just seems like crazy talk to me, but whatever! It seems like you have a good thing going in NC, so I'm glad for you.

Oh, and Katie, I didn't mean to be ignoring you! I'm sorry you're having a crappy day. Did you mention your sinus thing to the doctor?

I'm leaving work soon and I think I'm going to have a computer-free evening. I'll see you all in the AM.

we were in the kichen. i was on a bar stool w/ j in my lap. he had his back to me making coffee, bec you know hes so tired:rolleyes::rolleyes:. i had my huge glass of ice water .... i threw it on him from acros the kitchen. he screamed like a girl & i laufhed like a hyena.!!! felt sssssoooo GOOD!
 
Yeah, I left work at 5:20. It has been a long time since I left that early. I really needed to leave because I was just done. I was hoping Chris would be home but he got called to a client who is an hour a way. So I don't know if we will have pork chops for dinner or something else.

Kate, I am glad the rain is holding off and you FIL saved you today. I am the same way with help - I have a hard time accepting it.
Anne, I think you should keep the house. I know it will be extra work but it will be something familiar in a time of turmoil.

Morris, I hate doing errands in the rain. Hope you were able to get a few in before the downpour started.
Patti, I am not sure what I am going to do after June either. I have to see what Cathe posts for July.
Robin, I am the oldest and I am more level headed than my sister. Not that she has done anything really crazy but she was the one my parents worried about.

What a busy day! Waiting for dinner to finish grilling-steak and asparagus on the bbq and sweet potato:) Didn't do L&G...cause I loaned it out! I did GS Legs instead. I was only going ot do the standing legs portion, but being a Catheite, I felt guilty stopping!

I will come back in a few to catch up!

Kate: LOL at the water story. One time we were arguing and J was calmly eating a peanut butter sandwich. I grabbed it and ripped it in pieces. And OMG those CHEEKS! Julia is gorgeous.

Colleen: I hope you get a nice relaxing evening and feel a little less stress. Did you notice the scheduled rest day is mid week next week? Weird. That isn't going to work for me.

Guys - I feel like DEATH. I guess that's not nice to say, but I do NOT feel well! I just fell asleep in my chair - for about an hour, I think. I am on two Aleve and Sucrets. I am so so sorry to say that there is no way I can run tomorrow like this... I'm quite upset about that....
