"Clean" eating favorites

Hi Everyone -

I am trying to clean up my diet a little more, but I get stumped on what to eat and need some new ideas. I thought it would be fun for everyone to post their favorite "clean" breakfasts, lunchs, dinners and snacks. Not necessarily full on recipes, but just ideas for what to eat (i.e. dinner is grilled chicken, brown rice, asparagus and spinach salad). I can compile them all in one post at the end so everyone can use it.

For breakfast I eat Wheetabix or Shredded Wheat w/ fruit and 0%fat greek yogurt or nonfat natural yogurt; or rolled oats w/ a little milk, shredded apple, and again yogurt. Combines fruit, low-GI carbs and protein in one yummy dish.

Lunch is often a wholemeal pita w/ grilled chicken, salsa, lettuce, and maybe a little homemade guacamole or low-fat cheese. Or leftovers from dinner the night before (I am a SAHM.)

For dinner I try to have a two vegetables (one green), protein, and a little carbs. I made a yummy recipe w/ roasted cod, chickpeas, tomatoes and ginger the other night, served w/ tenderstem broccoli w/ ginger and garlic. Another good one I did this week was a one-dish roast in the oven - red bell peppers w/ basil and tomato inside alongside chicken breasts (or legs, or pork cutlets, lamb, etc.) After they were done I put added some couscous and veggie stock to the pan, and served the couscous alongside the peppers and chicken.

I get a lot of super-yummy, very healthy recipes from BBC Good Food magazine. Sadly, it's harder to find in the US (though I have seen it at Borders and Barnes & Noble occasionally when I've been over.) I like this magazine so much, and the recipes are so consistently good that I'm going to pay the extra $$$ to get an overseas subscription when I move back to the States!

My breakfast is always 1 Thomas brand Light Multigrain English Muffins (8 fiber & 7 proetin no suger per serving}() with a ts of Sugar Free Smuckers brand Blackberry Jam and 1 tbsp of Philly Fat Free cream cheese. I also have a cup of coffee with some skim milk, splenda, and 1 scoop of Designer Whey protein powder. I alos have a few grapes and 3 apple slices.

Lunch I have Turkey sandwich on a light whole wheat hamburger bun (5 fiber}() with luttuce. I also have a half of a large banana and a fat free low sugar yogurt w/ a tbsp of unsalted soy nuts. Diet Pepsi Lime to drink

My favorite dinner is a salmon packet w/ a slice of oat bran bread, salad, and steamed broccoli and string beans w/ a sugar free calcium water or a protein drink.

For snacks I have a half cup of lowfat cottage cheese w/ chive & toasted onion w/ a tbsp of soy nuts, protein bar (either Detour, Think Thin, or Nytrotech bar). I don't have these snacks all at once, just different times during the day. Sometimes I may also have a half of multigrain bagel too.

I eat a ton of chicken--roasted, grilled, broiled, etc--I don't know why, but I've been on a poultry kick this summer.

For snacks I love edamame, I swear I could eat a pound of those things in one sitting.

Also I'm a salad fanatic. Chicken salad, tuna salad, egg salad, chef's salad, antipasto, green beans/onions/tomatoes w/dressing, pretty much anything w/lettuce in it that I can play with & make a decent meal.

Pour skim milk over a coffee cup of frozen blueberries or blackberries. Top with some yogurt. Wait 3-5 min for the magic to happen. Mix it up and you just made some ice-cream!

For breakfast I have a smoothie, whole wheat muffin with all natural peanut butter, or Kashi's Autumn Harvest Whole Wheat cereal. I think that's the name of it. 1/2 a whole wheat bagel once in a while.

Lunch is my most difficult meal, I'm so busy that I don't want to take the time to sit and eat, so I usually keep some "healthy" cold cuts and whole wheat crackers around, and nibble that with fresh fruit and veggies. Soups too.

Dinner, I like my polenta and quinoa "pie" with red pepper sauce, a big salad, and sliced tomatoes. Just an example. :)

I think this a great idea you have about posting the meal ideas together.

Breakfast---2 slices whole wheat toast, peanut butter, banana OR 2 egg omelet with tomatoes, onions, cheese and fruit.

Lunch - Salad with chicken strips. I love to add raisins to my salad also. OR leftovers of some type of meat, veggies and fruit and sometimes sweet potatoes OR Turkey, lettuce, cranberry sauce in whole wheat wrap, carrots, fruit.

Dinner - Meat, vegetables and fruit and sometimes a small amt. of rice or sweet potatoes.

I try to drink water with most meals.
