Ok, I have been thinking about this for a while, so I went to the store and got the ingredients and decided to give it a try.
3/4 C. Brown rice (cooked)
1/2 tomato (raw) diced
1/4 C. black beans (I used organic canned only because cooking up your own takes all day long!!) But I made sure that there was no sugar added to it, I forgot to check for salt though. I did drain it and rinse though.
Anyway, Then add some cajun seasoning.
This was very filling and had all sorts of vitamins, minerals, healthy carbs and a good source of protein.
Just thought I would share my healthy creation.
