Chocolate-Caramel Explosion cake

1-3/4 c. sugar
2 t baking soda
1 t baking powder
5 sq. unsweetened chocolate, melted
1 c lukewarm strong coffee
3/4 c sour cream (I used fat free)
1/4 c Baking Healthy (a Smucker fat substitute for baking)

In a lage mixer bowl, combine all ingredients; beat on HIGH 3 minutes or until blended. Pour into greased and floured 9-inch springform pan. Bake at 350 degree oven for 1 hour or until toothpick inserted in center come out clean. Cool 10 minutes; remove from pan.

THEN: With small wooden spoon handle, poke holes into cake. Pour Caramel ice cream syrup over the cake until the holes stay filled up (the syrup will soak in) and the cake is fairly well saturated. The sprinkle the top of the cake with pecan pieces.

The original recipe called for melting caramel candies and all that jazz, but this was easier, PLUS the syrup is fat free.

This will not taste at all like a cake that has been de-fatted! Forget frosting it, too. It doesn't need it. The texture will be like a pudding cake. :9:9:9:9:9:9 Easy, easy easy, yummy, yummy, yummy!
 
i envy you being able to eat the things you post recipes for.

i just maintain my weight living off steamed broccoli.
My only intentional added fat is half and half in my coffee.... and one mouth full of cake and i have to eat the whole thing.

how is fat free sour cream?
i have read suggestions for using yogurt to replace sour cream but that seems a different thing because it doesnt really hold up in cooking...(in my experience anyway)
 
Please keep in mind that I only eat this stuff ONCE A WEEK, so I only have to be good for 6 days at a time. I now have marshmallows in the house, so I have to really watch it!;-)
 
The recipe looks great! I have been doing fairly well at maintaining my weight loss even while having occasional treats. However, I find myself lately having them much more often than once every six days!!! Do you have any other advice for guilt free snacks and sweets a little more often? Trust me though, I will be working towards putting more space between my indulgences. Thanks...Bayou Gal
 
But....they have a ton of calories when you eat half a bag!;-)
 
First of ALLOW yourself a goody every day, something not too outrageous. My current indulgence is fat-free sugar free Jello chocolate pudding made with skim milk. I allow myself some every day, and I work it into my calorie (or points) allowance. Sometimes I eat (no kidding!) Fat Free Cool Whip for my daily goody. It's always a goody that is low in fat, but something that I can eat quite a bit of. It also has to have some kind of portion control built in. I could never let myself get started on ice cream in a half gallon container, because I have a hard time putting on the brakes.

You have to know your limits! What works for me may not work for you.
 
Thanks for all the suggestions! Especially the ones involving chocolate (my favorite!). I have sometimes allowed myself some chocolate milk made with skim milk, but I had not thought of sugar free pudding made with skim milk. Thanks again!
