Morning! I woke up early this morning---wonder why? LOL. I'm so happy I'm going to get the new house. Now I need to sell mine!

Susan-the closing in our agreement isn't until August. But I'm going to call and ask them if they can close earlier; need to know about the house they are moving in to. Since I have almost 6 months to sell my house, that's what the closing date is based on. Hopefully we won't have to wait that long.

I have to work at the office today so no check-ins, most likely. Have a great day!

Marie, the food sounds good would love the recipies also.

Will be doing Imax2 and 200 walking lunges today.

My 12 year old decided to cut her eyelashes. She felt they where to long. I had to look up on the internet to find out if they grow back. Good thing for Dear Abby, it will take about 6 weeks. Why do they have to give me more gray hair than I already have! This has not been a good week to be a parent. Just happy DH is back to help me stay somewhat sane!}(

Hello Ladies!

Laurie, I have never heard any one cut their eyelashes before!:eek: It must be rough to have such nice long lashes that you think they need a trim! My son has lashes like those and I am always getting comments on what a heart breaker he's going to be... Glad to hear DH is back to help you cope!

Today was Step Jump & Pump and later I will be doing some pilates...

Jill, congratulations on getting the house! You must be so excited.

I went home from work sick on Monday and stayed home yesterday with a stomach bug. Yuck. I'm back in the office today but am still feeling pretty weak. My brother, my mom, my boyfriend and I are supposed to see B.B. King in concert tonight, so I'm hoping I can make it through. We got the tickets for my mom for her birthday.

Still trouble sleeping so no workout this morning. :( I will do a separate post with the Brie Strata recipe. Let me know if you wnt any others.

Laurie - wow, sorry about your daughter! Those are such tough years in a girl's life - body image, peer pressure, images of beauty, sigh. Did she cut them WAY down? The joy of parenting.

Ellen - I hope you feel better soon! Gosh, a stomach bug. Those are the worst! Hope you feel up to the concert tonight!

No workout again for me last night. Had to go to a city council meeting, yuck. They're doing a "neighborhood revitalization" of my blighted "inner city" neighborhood. Sigh. We'll see how THAT goes.

Brie Strata with Fresh Fruit Salsa

Unsalted butter
8 slices white bread - day old, crusts removed
4 eggs - lightly beaten
1 1/2 c milk
1 tsp salt
8-14oz Brie (rind removed)
Paprika for garnish
1 recipe fruit salsa

Butter one side of the bread slices.
Combine beaten eggs with milk and salt.
Cube brie.

Grease or spray 9 x 9 pan. Place half of the bread slices buttered side up and top with half the brie cubes. Repeat with remaining bread and brie. Pour egg mixture over bread. Sprinkle with paprika. Cover and refrigerate overnight.

Allow strata to stand at room temperature for 20-30 minutes before baking. Preheat oven to 350. Bake 35-40 minutes or until puffed and lightly browned on top. Allow to stand 5 minutes before cutting and serving with fruit salsa.

13 x 9 pan - she used 12 slices of bread, 6 eggs, 2 1/4 c milk and 14 oz Brie.

She bought the brie at Sam's (Remy Picot).


Fruit Salsa

1 pint fresh strawberries, sliced
1 d'anjou pear - peeled, cored, & diced
1 T honey
1 T fresh lime juice

Combine all ingredients above and allow to stand at room temp for at least 30 min before serving. Can do the night before but strawberries might not look as good.

Jill - Congrats on the house! How exciting.

Laurie - Your DD's eyelashes reminds me of a guy I work with who accidentally shaved off half an eyebrow one morning! I'm not exactly sure how he did it but none of us even noticed until he pointed it out! (He has very light blond hair so they kind of blend in with his skin.)

Marie - Thanks for the recipe and I'm interested in the crab quiche also. :9 My sisters and I take turns hosting a Sisters' Brunch every year and my SIL is vegetarian so the Brie Strata would be perfect. Not sure if she eats seafood so I'd have to check before making the crab quiche.

Ellen - Hope you're feeling better so you can enjoy the concert.

Sarah - You're so civic-minded! I'm impressed. Considering I live next to an Alderman and County Board member (husband and wife), I should get more involved in local government - but I don't. Shame on me.

Hi, Susan.

This morning was SH Back including planks and CTX Kickbox. I've been so sore since starting this 1 body part per day rotation. Man, my triceps are still sore from Sunday's workout! I do think doing less cardio is helping me keep my eating under control a little better since I'm not so hungry. I can see a difference in the mirror around my waist but that could also be from doing more Pilates.

Crab Quiche

1/2 c mayo (real mayo either regular or light)
2 T flour
2 eggs lightly beaten
1/2 c milk
1 frozen pie crust (you can make your own if you prefer) She uses store brand rather than name brand
1 (6 oz) can lump crab meat - picked clean, rinsed and drained (she uses the white Miller Select that she finds at Pick & Save in the seafood section)
1/3 c green onions - diced
8 oz swiss cheese - shredded

Preheat oven to 350.

In a food processor or blender, process mayo, flour, eggs and milk until smooth.

Prick piecrust evenly all over with a fork.

Evenly spread crab, green onions, and cheese in piecrust. Pour mayo/egg mixture over all.

Bake 40-50 minutes or until golden brown and set. Rest 5 minutes before slicing and serving.

We didn't but you can also add asparagus. Blanch, dry well and slice.
 
Thanks for the recipe, Marie - sound delicious! I'll have to see if our Pick & Save carries that brand of crab meat. My Mom is soooo picky about pie crust I don't know if I could get away with a a frozen, but I suck at making pie crust sooooooo I dunno. Maybe I'll test it out on my less-picky husband and son.

I am thinking this would be good for a quick and easy dinner with a salad. I suck at pie crusts too so it is either frozen or the ones all rolled out and you just put in the pan. These look more like you did it yourself.
 
Yes, this sounds like a great, slightly fancy dinner. Something out of the ordinary. I'm going to try it with a store crust, see how it tastes. Thanks again for the recipe & idea. I never go looking for recipes, so I really welcome it when it's dropped in my lap! Cheers! - Sarah
