Baking chicken breasts for later snacking

I know some of you bake chicken breasts so that you can refrigerate it in snack-size portions and take it with you over the next several days.

Can I get some pointers? (oh, and I buy the frozen boneless skinless chicken breasts)

Do you bake them on a flat baking sheet, or in a shallow baking dish?

Covered or not covered?

Seasoning?

Liquid, no liquid?

Cut them ahead of time or bake them whole or in halves?

How many breasts? What temp? How long?

What do YOU do?

I just toss them on a cookie sheet, uncovered and bake at 375 for abut 35 minutes because I like them on the chewy side!:)
I don't add seasoning, I like them plain, or I tear them up and dip them in fat free dressing.

Hi Gisela

When I make chicken I always use the mrs.dash Chicken season, its delsih! I usually just put it in a pan with the pam butter flavored spray! I cook them on a medium/high heat!

Before i start frying them,I spray them with some I can't believe its not butter spray then coat them with some mrs.dash!

There delish w/salads,sandwiches are just popped in the microwave and eaten by there selves!

Take care!

let me share with you a recipe that i got from monica brant at fit camp yesterday. she says that she likes to boil a whole chicken in water with some seasoning (i like seasoned salt and garlic powder) for about 45 min. you know the chicken is done because it will fall off of the bone. i tried this and i really liked it. i let it cool and put it away in three ounce portions. i don't even like dark meat but it was fine mixed with the breast. trish

chicken is my fav but i cannot stand any meat left over. how do you prepare it so it does not taste that way? i eat chicken salads at restaraunts and it still tastes fresh. i would like to be able to have it the next day.

I usually grill mine on my indoor grill. I also make white meat turkey burgers or white meat turkey meatloaf and put it in muffin cups to bake.

I buy the frozen bags of Tyson grilled chicken breast strips at costco and they have been a lifesaver. I reheat them in a nonstick pan with a little pam. These taste a lot better than any grilled chicken I've ever made at home and much more convenient. I use them for salads, fajitas, quesadillas, soups, etc.

Those would be really good and convenient, but I have a potential for high blood pressure, so I try to stay away from high sodium foods and I know those have too much sodium for me (or I'd use them!)

I cook mine on a jelly roll pan. I drizzle olive oil (smear it around on each breast), salt and freshly ground black pepper. You can add other seasonings if you want. I bake them at 350 for about 30-40 minutes. That's how I always cook chicken when I need cooked chicken in recipes. I used to boil them, but not anymore, since I learned this method. Yummm :)

I cook chicken several ways. In a crock pot or slow cooker, I put a few breasts. I either add a jar of salsa or a package of taco seasoning (but watch the sodium) with 2/3 C water. Put it on low and cook for several hours. Then shred with 2 forks! It's awesome on lettuce, on a sandwich, over baked tortilla chips, etc. If I feel like baking them, I put a few chicken breast in a shallow pan, sprinkle with Seasoned Sald or Mrs. Dash and 2 Tablespoons water. Cover with foil and bake at 350 for about 20-30 minutes.

YUMMY!
