Baked onion rings

I googled a sub for the buttermilk, I think I can use 2/3 cup plain yogurt or sour cream with 1/3 cup milk instead.



3 large onion, sliced 1/4 inch thick
1 cup butter milk
Nonstick cooking spray
1/2 cup all-purpose flour
1 teaspoon paprika
1/2 tsp salt
4 egg whites, beaten
1 1/2 cups cornflake crumbs


Cut onions into rings. Mix with buttermilk in a large bowl until
coated. Set coated onions aside 20 mins. Preheat oven to 375. Spray a
baking sheet with nonstick cooking spray. Combine flour, paprika and
salt in a shallow dish. Put egg whites in a second shallow dish and
cornflakes in a third. Dip each onion ring in the flour, the egg and
the cornflakes. Place on sheet, spritz with cooking spray and bake 15
mins, until brown.


 
Hi, Laura, I just read somewhere yesterday that adding white vinegar to regular milk makes buttermilk. I think it was in the cooking section of pioneerwoman.com. She has an onion ring recipe, too, but she fries them.

Anyway, these sound great! I love onion rings, but don't do any deep frying. This is just the ticket to make these at home.

you can also add lemon juice to reg. milk to make b'milk.
let it stand 10 minutes to thicken before using tho!
 
Thanks for the tip--I'd actually seen the lemon juice alternative too, but I'm not so handy in the kitchen & I thought I'd be better off w/the yogurt. Otherwise I'd be puckered for a month. :D
