Bacon Cheeseburger Upside Down Pizza

8 slices bacon
1-1/2 lb ground beef
1 onion, chopped
1 green bell pepper, chopped
2 cups pizza sauce
3 roma (plum) tomatoes, chopped
1/4 lb shredded Cheddar cheese
2 eggs
1 c. milk
1 Tble. vegetable oil
1 c all -purpose flour
1/4 c. salt

1.Preheat oven to 400 degrees. Fry bacon until evenly brown; drain. Crumble and set aside 2 slices. Crumble remaining 6 slices.
2. Saute the beef, onion and bell pepper until beef is browned. Drain, and stir in the 6 slices crumbled bacon and pizza sauce. Spoon mixture into an ungreased 9X13 inch pan. Sprinkle with tomatoes and top with the cheese.
3. In a medium bowl, beat the eggs slightly. Mix in milk and oil, then add the flour and salt. Beat for 2 minutes at medium speed. Pour evenly over the meat mixture. Sprinkle with the remining bacon.
4. Bake in preheated oven for 20-30 minutes, or until topping is lightly puffed and deep, golden brown.

I used VERY lean ground beef, fat free shredded cheddar cheese, and egg whites to de-fat this as much as I could. If you have some of Emeril's Essence around the pantry, you could give it an extra "Bam" of that for some extra seasoning.

Can't beat this for being easy, and there was very little left over for 4 adults and 2 little kids.

HB, your recipes never fail to be awesome...I'm going to add this to my collection for next fall (feeding farmers out in the field is much easier with a great casserole or one dish meal!) This sounds very similar to sloppy joe under a bun, just mix up sloppy joes, I place sliced American cheese on top and then cover with bisquick mix or the flour and egg mix as above and bake...that's a good one too!

Sounds really good. Could you make this with Turkey bacon? Our family only eats turkey bacon, it would probably cut down the fat also. Thanks for the recipe. Amy Jo

i could only have fantasies about eating anything like bacon cheeseburger upside down pizza!

a a typical dinner in my life is an egg white omlette and a head of steamed brocolli with vinegar, salt and pepper!!
green tea with nothing in it for dessert!!

(bet no one is going to collect my recipes!)
 
But my dear, I de-fatted it for you!!!!! Just fry up some turkey bacon, and eat it without guilt!
