I had the recipe card that they gave me I think week 9, for vegetable lasagne, and I LOST IT. I can't find it at all, I'm frantically combing my house. I used to make that recipe once a week, it seems like. Can anyone help??

It was dry lasagne noodles, low fat ricotta (fat free?), tomato sauce, vegetables, and then you layered them and cooked them. OMG I can't believe I lost this recipe!!! I have all the other weeks. Can anyone help?? WW online won't let me in any more without paying.

I just got up again to look, and still I can't find it! If you happen to have or remember it, can you post the recipe? It's really easy and fast and yummy.

Thanks!

Hi Amy,

I joined in 2002, and my week 9 card is called "Easy Cheese Lasagna", but it sounds like the one you're looking for:

1 jar spaghetti sauce
6 uncooked lasagna noodles
1 container (15oz) fat-free ricotta cheese
1-2 cups sliced or chopped raw vegetables, such as mushrooms, broccoli, and bell pepper
1 package (8oz) shredded low-fat mozzarella cheese

1. Preheat oven to 375 degrees F. Spray 11x7 inch baking dish with non-stick cooking spray. Spread 1/3 of the sauce on the bottom of dish; arrange 3 noodles in a single layer over sauce. Top with another 1/3 of the sauce, all of the ricotta cheese and vegetables, and 1/2 of the mozzarella cheese, then remaining noodles in a single layer. Spread evenly with remaining sauce.

2. Cover dish with foil; bake until noodles are tender and mixture is piping hot, about 1 hour. Sprinkle with remaining mozzarella cheese; bake uncovered 5 minutes longer. Let stand 5 minutes before cutting.

I've never tried this recipe because I can't find ff ricotta cheese. Is it really yummy?

Cheers,
Sandra

Sandra,

YOU ARE A LIFE SAVER. Thank you so much!! I promise to save this on my computer now, so I can't lose it!! ;)

I use low fat ricotta cheese. I can't remember if I could find fat free in Santa Barbara, which is where I was when I made it all the time.

It's really quick to make. I tried it once with zucchini and it ended up so watery it was gross, that's the only time it wasn't good. I got spinach, carrots, and mushrooms at the store today, special to make this. YUM! LOL, though, next time I should check and make sure I have the recipe first!

OOh thank you so much. This is wonderful! Yay!!
