Any recipes for homemade HEALTHY ice cream/frozen yogurt?

I dug out my ice cream freezer this morning. The kids and I are celebrating the last day of school by making homemade ice cream. Older DS wants Rocky Road and younger DS wants Strawberry. I, however, would like a low fat version of pretty much any flavor.

Does anybody have a recipe for low fat ice cream or frozen yogurt? Any flavor?

I found these...HTH!

LOW - FAT, NO CHOLESTEROL STRAWBERRY
ICE CREAM

1 lg. pkg. instant sugar-free vanilla pudding
2-3 c. crushed strawberries (or other fruit)
1 lg. can evaporated skim milk
2 c. sugar
5-6 c. skimmed milk

Mix dry ingredients, then add other ingredients and mix well. Freeze in an ice cream freezer and let set 30 minutes to 1 hour.


Rocky Road Ice Cream (not low fat, but maybe you could adjust to fit recipe above?)

1/3 cup unsweetened cocoa powder
1 cup sugar
2 cup milk
1 teaspoon vanilla extract
1/8 teaspoon salt
2 cup whipping cream
1 (1-oz.)square semisweet chocolate
1 cup miniature marshmallows
1/2 cup chopped almonds or pecans

Yield: 2 Quarts

In a large saucepan, mix cocoa powder and sugar. Gradually stir in milk. Stir over low heat until sugar and cocoa dissolve. Cool to room temperature. Stir in vanilla, salt and whipping cream; set aside. Shred chocolate with coarse side of grater. Stir shredded chocolate, marshmallows and almonds or pecans into cocoa mixture. Pour into ice cream maker. Follow manufacturer's directions. Stir marshmallows evenly throughout frozen mixture before serving or ripening.
 
I dont like the idea of pudding. Who knows whats in there? I bet someone here will find out though :D
 
This isn't an ice cream recipe for a machine but it's sorta close! It is yummy and easy. Freeze fruit of your choice, pineapple works great!!! Once frozen, I put in my Cuisinart and pulse w/plain yogurt and a tiny bit of sugar. Smooth and wonderful :)

I have some pineapple in my freezer for just this reason!!!!

Another fruit option: buy some ripe bananas, peel and break into 2-3 segments and freeze. Use these as the basis for an ice-creamy-like dessert by adding fresh or frozen fruit or cocoa/carob, flavorings, etc. and mixing in a food processor or sturdy blender (like Vitamix) or running through a juice extractor like Green Star.
