Proponents of cleansing/fasting use it to give the body a break from digestion, so the body can go to work cleaning the liver and other organs. There are so many toxic substances in our everyday life (including processed foods, prescription and non-presecription drugs, chemicals, heavy metals used in fillings, etc.) aside from the toxins created from the normal metabolic processes, that a once-a-year cleansing isn't a bad idea, IMO.
But one way one can 'detox" the body without fasting is to take chlorella, which is a good detoxer, and also binds with heavy metals and removes them from the body.
I think it's rather ironic that the people most apt to want to fast/detox are probably less in need of it than those who wouldn't even consider it (like people who exist on processed foods, and smoke, and have a more toxic lifestyle in general.
