I made this last night and had to share it is so good.
Spicy Thai Chicken with peanut sauce
1lb. chicken
1 bag of frozen stir fry veggies (or fresh if you want)
Peanut Sauce
2 tsp brown sugar
1 tblsp soy sauce (I used low sodium)
1/4 cup or skim milk or water (your preference, I used the milk)
3 tblsp peanut butter ( I used reduced fat skippy, but whatever you like)
crushed red pepper flakes (I like mine spicy, use as much as you like)
Spray pan with pam and cut up chicken into bite size pieces. Season with salt and pepper.Cook until chicken is no longer pink. Add veggies and cook until done.
Peanut sauce. Mix all ingrdiants up and microwave till peanut butter is melted. Took me about 20 seconds.
Add sauce mixture to chicken and veggies and stir to coat.
Serve with brown rice.
