need a vegan substitute

Hi,

Does anyone know what a vegan substitute would be for buttermilk, and for one egg? I want to make Tennessee Corn Pone, which is essentially corn bread baked on top of kidney beans.

I know one of my Vegan cookbooks uses a lot of the Ener-g egg replacements.

I believe the substitute for buttermilk would be 1 cup soymilk with 1 tbsp lemon

rice milk works too! ;-)
