Glazed Chicken & Rice

I got this recipe off the back of Sunmaid Raisins--it's a bit of a different taste but it was DELICIOUS!!!

4 skinless boneless chicken breasts cubed
2 tbs brown sugar
2 tbs soy sauce
1/2 tsp crushed red pepper
2 cups white rice
2 chicken bullion cubes
4 cups of water
1/2 tsp ground cinnamon
1/2 tsp ground ginger
1/2 tsp ground coriander
1 cup raisins
1/2 cup thinly sliced green onion
1/2 cup chopped parsley

In a dutch oven, spray with fat free cooking spray, add chicken & cook until browned. Reduce heat, add brown sugar, soy sauce & red pepper, stir chicken until glazed. Continue to cook until chicken is cooked through. Remove chicken from pan & add bullion & water, add rice, cinnamon, ginger & coriander. Cook until rice is tender. Remove from heat & stir in chicken, raisins, onions & parsley. Cover let stand for 5 minutes & serve hot.

This was a great one pan dinner & even my picky teenaged daughter liked it. Enjoy!
