This came out very flavorful:
1 butternut squash, diced, approx 1" pieces
2 carrots, diced or sliced
2 celery stalks, chopped
2 medium potatos, diced
1 medium onion, diced
3 cloves garlic, chopped
3 - 4 cups chicken stock
1 - 2 TB oil (or you can use chicken stock to reduce fat content)
1 tsp curry powder
salt & pepper
Saute onion, carrots, celery and garlic until softened in a large pot. Add squash & potatos and cover with chicken stock. Simmer until veggies are softened. Use an immersion blender or transfer to blender or food processor and blend until smooth.
Return to pot and season with curry powder and salt and pepper to taste.
You can garnish with sour cream, heavy cream, croutons, etc.
