Egg & Tomato Melt

Ingredients

2 slices of light whole wheat bread (35-40 calories per slice, no High Fructose Corn Syrup)
2 eggs (Eggland’s Best)
1 small tomato, sliced
1 slice reduced-fat swiss cheese
1 TB chopped green onions
2 tsp sweet & hot mustard (no HFCS)
dash of dill weed
dash of crushed red pepper
1 tsp olive oil

Directions:

1. Heat olive oil in pan and fry eggs ‘over-easy’, sprinkled with dill and red pepper.
2. Toast bread and spread with mustard.
3. Arrange tomato slices on bread.
4. Place one egg on each bread slice.
5. Cut cheese slice in half diagonally and place one half on each egg.
6. Top with green onion.
7. Microwave for 30 to 45 seconds or until cheese is melted.
