Ingredients
2 medium sweet potatoes, washed, (unpeeled if you like), cut into strips
1 tsp ground cinnamon
1/8 tsp pepper (optional)
1 TB olive oil
Dip:
1/2 c fat-free plain greek yogurt
3 TB whey protein powder, vanilla flavored
1 TB honey (optional) or sweetener of your choice
Directions:
– Preheat oven to 425F.
– Coat potato strips with olive oil and sprinkle with cinnamon (and pepper).
– Spray a glass dish with olive oil cooking spray and bake in a single layer 10 minutes on each side, then broil 2 to 3 minutes.
– Mix yogurt with protein powder (and honey if desired).
– Serve immediately
