Ingredients
2-3 garlic cloves
1 medium sized sweet potato
2 medium sized zucchinis
12 egg whites
1.5 cups of almond meal/flour
1/4 cup of coconut oil
Salt
Pepper
Chipotle pepper Seasoning (optional if you like to kick up the flavor)
Directions:
Preheat over 350 degrees. In a food processing chop up garlic. Change chopping blade to shredding blade and shred the peeled sweet potato and 2 zucchinis. Place the veggies into a big bowl and add egg whites and almond flour and melted coconut oil. Season the mixture. Measure out 1 cup of mixture onto a cookie sheet (I used parchment paper on cookie sheet). You can fit about 6 patties and a sheet, flatten them out a bit. Place in over. Cook for 15 minutes and flip patties, cook for another 15 minutes. You want them to be slightly browned along the edges. Depending on size of patties, should make about 12-15 patties.
