Salmon Egg Sandwich

Ingredients

1/2 teaspoon olive oil
1 tablespoon finely chopped onion
2 large egg whites, beaten
1 pinch salt (optional)
1/2 tsp capers,chopped, (optional)
1 ounce smoked salmon
1 slice tomato
1 whole wheat English muffin, split and toasted

Directions:

1. Heat oil over medium heat. Add onion and cook, stirring, about 1 minute.

2. Add egg whites, salt and capers (if using) stirring constantly, until whites are set, about 30 seconds.

3. To make sandwich, layer the egg whites, smoked salmon and tomato on muffin.
