Pumpkin Chia Pudding

Ingredients

• 1/2 cup pumpkin puree
• 4 pitted dates
• 1/3 cup organic coconut milk or Almond milk
• 1 banana
• 1/4 cup water
• 1/4 cup raw pecans
• Pinch of sea salt
• 1/2 teaspoon pumpkin pie spice (or 1/4 teaspoon cinnamon + 1/8 teaspoon nutmeg + 1/8 teaspoon cloves)
• 2 tablespoons chia seeds ( I use organic)

Directions:

1. In a high speed blender (such as a Vitamix), add the pumpkin puree, dates,choice of coconut or almond milk, banana, water, pecans, sea salt and pumpkin pie spice. Processes on high speed for one minute or until ingredients are well blended.
2.Shut off blender and gently Stir in the chia seeds
** Important~ do not process chia seeds in the blender**
3. Transfer mixture to (2) individual 4-ounce ramekins or fancy dessert glasses and refrigerate for at least 45 minutes before serving. Serve chilled.

You also May prepare in advance and store in the fridge for up to 3 days ( I usually triple ingredients and have alot on hand especially in the fall months!)

  • Sounds super yummy! Will definitely try it. One question…why no Chia seeds in the blender? I make a smoothie and always throw a heaping tablespoon in it before processing…am I ruining my blender? Thanks!

  • Hi Girls … first question about chia seeds I Was told never to process in blender so Thought I would share but if you do and your blender is good then IDK Honestly why I was told Never too I guess it was because It was thought to destroy blender?? Not sure?? Just never put in … will have to look into that further, lol!! ANd Lisa… Yes def try Applesauce may not have same taste but certainly cannot hurt let me know if you try it and how it comes out… Thanks so much 🙂

  • I think it depends on the texture you want in your pudding? If you place the chia seeds in the blender (a high speed power blender processes them no problem!) with the liquid component and let sit for 10 minutes before processing with other ingredients it will come out more pudding like (chia seeds can be used as a binder in vegan recipes) and thick. If you like a more tapioca like texture then add them at the end as per the recipe.
