Ingredients
6 Apples ( Granny Smith or another soft apple)
6 sticks
1cup unsweetened Coconut
3/4 cup chopped almonds or peanuts
1 1/2 cup Oats
1/8 tsp salt
1/8 tsp vanilla
3TBS Peanut or Almond butter
3/4 cup plus 2TBS Honey
Directions:
Toast oats, coconut and nuts
( coconut toasts on 325 for 6 minuets, oats toast on 350 for 14 minuets, and chopped almonds or peanuts toast on 350 for 10 minuets)
Mix oats, coconut and nut together….
While you are toasting the granola mixture warm up on the stove your nut butter, honey, vanilla and salt…keep warm…do not boil..
Line a plate or platter with wax paper
Insert stick into apple
Hold apple by the stick over sauce pan you melted your honey mixture in and spoon the honey mixture over apple…once apple is coated roll the apple in the granola mixture pressing the mixture gently on the apple….
Take the apple and place on wax paper…finish the rest of the apples and then refrigerate for at least a half hour for honey to harden…
And then
ENJOY!
Any left over granola mixture can be stored in a jar and used for salads or yogurt toppings…
I tried the almond butter version and it was amazing!!! My husband who doesn’t normally like anything healthy said they were awesome!!
These are great! A much healthier alternative to caramel apples. My kids loved them!
