Gluten-Free Pumpkin Bread

Ingredients

2 cups of almond flour
1 tablespoon ground flax
1 tablespoon chia seeds
1/2 cup pecans
1 cup canned pumpkin
2 tablespoons ground cinnamon
1/2 tablespoon sea salt
1 teaspoon baking soda
5 eggs
1/2 tsp stevia
3 tablespoons of honey

Directions:

Mix flour, salt, cinnamon, baking soda, flax, chia and pecans in a blender/food processor until uniform.
Add pumpkin, eggs, honey and stevia. Blend until uniform.
Pour into loaf pan which has been sprayed.
Bake at 350 for 40-45 minutes.

  • I followed this recipe to a “t” and I think the Salt needs correcting. I was suspicious when it said 1/2 TABLESPOON Sea Salt. The bread turned out SUPER salty. I think it should have read 1/2 a TEASPON Sea Salt. Can anyone confirm? Also, I’d suggest adding Pumpkin Pie Spice or some other typical pumpkin pie spices to give it a bit more depth in flavor.
