Cranberry-Banana Breakfast Ring

Ingredients

2 cups all-purpose flour
1/2 cup packed brown sugar
1 teaspoon cinnamon
2 teaspoons baking powder
1 banana, sliced
3/4 cup fresh or frozen cranberries
1/4 cup canola oil
2/3 cup water
2 tablespoons raw sugar (optional)

Directions:

Preheat the oven to 350 degrees F. Mix together the flour, brown sugar, cinnamon, and baking powder. Stir in the banana slices and cranberries. Make a well in the center of the dry ingredients and add the canola oil and water. Fold mixture until all dry ingredients are incorporated (be careful not to overstir or cake will become gummy). Spread dough in a greased tube pan (batter will be thick). Sprinkle top with raw sugar if desired.

Bake at 350 for 40-45 minutes until top is set and edges of cake pull gently away from the sides of the pan. Remove from pan and cool on cooling rack. May be served warm; best served at room temperature.
