Ingredients
1 whole egg + 3 egg whites (or 3 whole eggs)
2 tbsp. coconut butter, melted (or oil of your choice)
1 banana, mashed
3 tbsp. sucanat (or brown sugar)
1/4 tsp. salt
1/4 tsp. baking soda
1/2 tsp. vanilla
2 tbsp. ground flaxseed
1/4 cup coconut flour
1/4 cup walnuts (optional)
Directions:
Preheat oven to 400F.
Lightly grease 6 muffin cups with shortening.
In a large bowl, mix together the eggs, oil, sugar, banana, salt, baking soda and vanilla. Stir in flour. Fold in walnuts (if using).
Evenly distribute batter into the 6 greased muffin cups.
Bake for 18 minutes at 400F.
Remove from muffin pan and let muffins cool on rack.

Note: these muffins freeze well.
Just thought I’d share that even though the ingredients call for flax seed the directions don’t include them. (I added them with the flour). They’re baking at present – hope to come back with great reviews!
