Chocolate Pumpkin Protein Bites

Ingredients

You will need…

1 1/2 cups Rolled Oats

1/4 cup nut butter

1/4 cup local honey

1/2 cup pureed pumpkin

1/2 cup pureed apples

1/2 mashed ripe banana

3 scoops Vanilla Protein Powder

2 TBSP Pumpkin Spice

1 tsp Cinnamon

**optional – raisins, nuts, dates, chocolate chips
**I used 1/4 cup chocolate chips in this recipe**
Feel free to make it your own!!

Directions:

Preheat oven to 350
Toast oats for 10 minutes as you mix rest of ingredients

I mixed the wet ingredients together first to ensure
everything was blended well.

I then mixed each dry ingredient in at a time.

Finally added chocolate chips –

I used an 8×8 baking dish, lined with tin foil
that was lightly sprayed with pam cooking spray

Spread Pumpkin mixture into baking dish.

Bake for 20-25 minutes.

Allow to cool.

The tin foil lining makes for easy removal.
Since these are a bit delicate,

I found they worked
best when cut into smaller BITES.

  • How much is in each “Scoop” of protein powder? My powder’s scoop is about 3 tbsp.

So about how much total protein powder are we talking about?
    Thanks!

  • Ck…. The standered scoop you have for your protein powder is what you use… I believe they are all the same… so yes 2 scoops of your scoop is perfect… and Linda… noooo Sorry I don’t know the breakdown of nutritional info…. so sorry… all i know is its REALLY REALLY Good and cannot be much more than a protein bar smaller in size… Sorry couldn’t help you more….. I know though that all ingredients are very good for you and not bad but like all things in moderation is the best no matter what but iam sure you know that:)) Just don’t add the choclate chips and add cranberries or dates/raisons instead… i just did a batch without choc chips and just added raisons and actually liked them better!! Let me know how they come out!! warmly… Jen

  • also A GREAT time saver if you cannot puree pumkin or apples by insweetened apple sauce and use that instead and you can use canned pumkin I actually recently had no time this last batch i made and used this option and came out JUST AS GOOD but alot less time… just thought i would share that with you all… incase u want to make but don’t have the processer ect,…. to puree… Let me know how they turn out!!

  • As far as nutritional breakdown….many sites have the option to build a meal and then it shows the breakdown…..

  • Linda… Really Could u please share those sites with me would so appreciate it… Thanks!!!

  • The ingredients list looked good to me and I was excited to make this. However, this didn’t turn out for me. It was really awful. Both, the texture and taste was bad. I ended up soaking the stuff in milk and then tried to use it up as cerial so I wouldn’t have wasted all those good ingredients. Also wished, I cut the recipe in half first. 🙁
