Blueberry Zucchini Bread

Ingredients

3 eggs, beaten
3/4 c. applesauce
1/4 c. olive oil
4t. vanilla
1 3/4 c. sugar
2 c. shredded zucchini
1 1/2 c. whole wheat flour
1/4 c. all purpose flour
1/4 c. ground flaxseed
1t salt
1t baking powder
1/4t baking soda
1T cinnamon
2 c. blueberries (fresh is best, but frozen works, too)

Directions:

Whisk together eggs, applesauce, oil, sugar, and vanilla. Fold in zucchini. Add dry ingredients and beat. Fold in blueberries. Lightly spray 3 mini loaf pans with cooking spray. Bake at 350 degrees for 40 minutes or until toothpick inserted comes out clean. Can also make 1 large loaf and bake about 1 hour.

This recipe is a great way to use up this season’s fresh produce. The bread freezes well.
