Gluten & Guilt-free Gingerbread Yogis

Ingredients

1 cup coconut flour
1 1/2 scoops Jay Robb Vanilla Whey protein powder
1 cup Arrowroot Powder
1 tsp of Guar Gum
1/4 tsp of baking powder
1/2 cup of Raw coconut sugar
2 tbsp of Erythritol or xylitol (optional)
2 tsp of allspice
3 tsp of ginger
2 tsp of cinnamon
2 tsp of Pumpkin Pie Spice (or ground cloves)
pinch of sea salt
1/2 tsp of baking soda
2 eggs
1/2 cup of Coconut Nectar or Pure Maple Syrup

 

Directions:

Mix dry ingredients well.
Then mix in wet ingredients and mix well.
Form dough and shape into whatever shape you like, use your favorite cookie cutter, or just form into balls and press down with fork in cross-wise pattern to form gingerbread cookies.
Bake on 350 until golden brown and mostly crispy but a little soft.
About 15 minutes depending on oven.
Enjoy!
Makes about 10-12 larger cookies, or about 2 dozen cookies!
found a cookie cut-out of a Warrior 2 yoga pose and wanted to make healthy protein-packed cookies for a treat after my yoga class. I had to make a big batch so you can cut the recipe in half for smaller batches. Find a fun little cookie cutter and go to town! Ginger is great for detoxification and digestion so it was a no-brainer for me to have these has post-yoga snacks!
