Ingredients

6 oz fat free vanilla flavored yogurt (Yoplait Light was used to calculate nutritional values)
½ cup frozen strawberries
½ frozen banana, sliced (3-4” of a banana)
2 Tbsp cashews, whole
Dark chocolate chunk, equivalent in size to one Hershey’s Dark Chocolate Kiss

 

Directions:

Chop the cashews, or other nuts of your choice, and set aside. Place frozen fruit in a food processor, I use the small Ninja. Spoon the yogurt over fruit. Blend just until yogurt mixture reaches a texture similar to soft serve ice cream. Mix in, or top, with nuts and dark chocolate shavings. Have fun experimenting with different frozen fruits making sure to keep the ratio 6 oz yogurt for each ½ to ¾ cup frozen fruit and ½ frozen medium sized banana to get the ice cream-like texture. If you add too much fruit, it becomes difficult to blend. Conversely, if you go heavy on the yogurt, you’ll end up with a smoothie. Some of my favorite fruits that work well with banana: mango, cantaloupe, raspberries, blueberries. A little shaved coconut on top is delicious as well. Makes approximately 1 ¼ cups frozen banana split yogurt.
