Ingredients
1 small apple
1 slice whole wheat light bread (40 calories or less per slice)
1 TB natural crunchy peanut butter
1 TB water
1 tsp lemon juice
1 packet sugar substitute like Truvia or Splenda
1/4 tsp cinnamon
2 TB plain greek yogurt
2 tsp vanilla flavored whey protein powder
Directions:
1. Core and slice apple (peel if desired).
2. Mix with water and lemon juice, microwave covered 90 seconds or until soft.
3. Add cinnamon.
4. Toast bread and spread with peanut butter, sprinkle with 1/2 of sugar substitute and top with apple mixture.
5. Mix yogurt with 1/2 of sugar substitute and protein powder and pour on top. Serve immediately.
