Need Healthy Picnic Dessert Recipe

I know I'm asking kind of late, but does anyone have a light, healthy summer dessert I could bring to a picnic tomorrow? I have a store bought angel food cake which I was thinking of layering with some fresh fruit, but it feels un-unspired.

My friend has just recently started on WW, so I'm trying to think of options that are low in points. For those of you unfamiliar with WW, low points usually means anything high in fiber, low in fat. She's not a huge fruit lover and she hates strawberries (can you imagine, not loving strawberries?!?!?!?!). I'm hoping someone might be able to throw some ideas at me that I can put together either tonight or tomorrow am.
 
Something my Mom used to do but I don't really have a recipe for it:

Cut a layer off the top of the angel food cake (1/2 to 1 inch depending on the heighth).

Then cut a "tunnel" out of the middle by cutting the 1/2 inch on the inside and on the outside (so if you took a cross section it would look like a square cut out of the middle).

Scoop out the "tunnel" portion of the middle of the cake.

Clean and cut up some strawberries (or other summer fruit - berries work great) and mix with some Cool Whip (whichever kind you like, but most is very low in fat).

Fill the "tunnel" with the fruit/Cool Whip mixture and put the top back on. Then "frost" with additional Cool Whip and put a few strawberry (or whichever fruit you use) ontop for a decoration.

Very light and low in fat.
