I'm Throwin' in the Towel for Dinner Tonight!

There I was, standing in the kitchen, thinking about what I am going to make for dinner tonight. Last night was Thai coconut-pumpkin soup and tomorrow is East Indian Stew but for tonight I could not come up with a one darn thing. Post-Thanksgiving I am somewhat burned on cooking.

And then I spied it in the cabinet behind the quinoa and brown rice: Annie's Organic Boxed Mac and Cheese, left over from when my niece and nephew spent the weekend. It may have been my imagination but I think there was a heavenly glow around the box.

So that's it ladies. No excuses, no way to make it sound any better than it is. Tonight, I'm gonna make boxed mac and cheese for dinner. I may go totally crazy and not even put a salad with it!

Salad

What time should I be there? Oh gawd, that sounds good. I'm in want of comfort foods right now -- that food that makes you feel as if you've been snuggled in a soft blankie. :D

Is it the powder kind or the creamy cheese packet kind? I mix my Annie's with a packet of tuna fish and some frozen peas-not bad when you're desperate:) It tates like Velveeta Shells and Cheese!

I confess that I enjoy Annie's Whole Wheat shells with some sizzled up tofu cubes mixed in it.....yum

My girls would have loved some of that Mac and Cheese! I made meatball sandwiches last night!!!! From frozen meatballs! I almost didn't make a salad, but just had to try and make up for those sandwiches!!! Does it count that they were on homemade bread?!?! :p

Anything homemade counts, IMO! :D

This isn't even the whole wheat kind. It's just straight-up orange logs. Should be good. :D

You know what I don't understand. I can make homemade mac and cheese with ww pasta, skim milk, and my girls Love it, BUT they think they were getting a special treat to have that boxed stuff! There is something about those bright orange, slick little logs! :D Enjoy ;)

I think the Bare Naked Ladies would concur about those slick little orange logs;)

I have a similar issue with my boys. I can make mac and cheese and I think it's pretty darn good, but they just go on about much they'd rather have Amy's Mac and Cheese.

ok so you think that's bad... Try regular Kraft Mac n Cheese, with heavy cream instead of milk, margarine, then add a cup of 4-cheese blend shreaded cheese! add some Sweet Thai chili sauce for a bit of a kick and you have some Kick-A$$ MnC!

Did I say I had this for dinner Sunday night??? should have just pasted the fat on my butt, but it was SO yummy!

I also agree with SSW! I have been known to put tuna in my MnC from time to time!
