1 pound boned and skinned chicken breast -- cut in 1" cubes
1 can pineapple chunks in juice -- (20 ounces)
1/2 cup honey mustard
1 green or red bell pepper -- cut into chunks

Heat 1 tablespoon oil in nonstick skillet. Cook chicken for 5 minutes
until
well browned; drain.

Add remaining ingredients. Bring to boiling. Reduce heat to medium-
low;
simmer 5 to 8 minutes until chicken is no longer pink in center and
sauce
thickens slightly. Serve with rice if desired.
